Picture a place where it’s possible to enjoy the creations of a veritable who’s who of Chicago’s female chefs—Sarah Grueneberg, Dana Cree and Diana Dávila, to name a few—under a single roof. This magical foodie Valhalla is found at The Wing Chicago, a new women-oriented coworking space in Fulton Market, where The Perch restaurant is open to members and their guests.
Though The Wing serves a core menu at all locations, there are unique tweaks based on each city’s dining scene, says Culinary andBeverage Director Dani Dillon. To inject local flavor, she draws from each city’s pool of James Beard award-winning and Michelin-starred chefs, along with underground favorites. “I try to find legendary women and those who represent the city in a different way,” she says.
The results can be found all over The Perch’s menu, from loaves of sourdough bread supplied by Sandra Holl’s lauded Floriole Bakery to cocktails from Lost Lake’s Shelby Allison. Dávila shared the cactus salad from Mi Tocaya Antojeria’s menu, while Adrienne Lo, co-owner of Fat Rice, offered a tofu salad drawn from her grandmother’s recipe.
The process in Chicago was uncommonly collaborative, Dillon says. “Everyone was really generous to each other and super willing to connect, and that doesn’t happen in every city.” 811 W. Fulton Market
