Restaurateur Josh Kaplan of Greenwood American Kitchen & Bar has joined forces with renowned North Shore chef Todd Stein to introduce a new dining concept, Deere Park. Now open at 200 Green Bay Road in Highwood, the restaurant transitioned from Greenwood and takes up residence in its former space.
Aiming to showcase bold flavors and cutting-edge techniques, the menu reflects chef Stein’s signature style, shaped by his extensive culinary background. His experience includes working under acclaimed chefs like Keith Korn at Gordon and Michael Kornick at mk, as well as leading acclaimed restaurants such as Formento’s, The Bristol, The Florentine and Cibo Matto. Most recently, as culinary director of Ballyhoo Hospitality, chef Stein contributed to the success of fan-favorite North Shore institutions Sophia Steak and Pomeroy.

“With Stein joining us as chef-owner,we are taking things in a new, more elevated direction,” Kaplan says. “Diners on the North Shore have come to know and love Todd’s food through the Ballyhoo restaurants over the years, and we’re excited to invite those guests to keep enjoying his food at Deere Park.”
The opening menu highlights shareable plates like seared tuna with Cajun spice, crushed avocado, chipotle aioli, crispy shallots and lime; beet and burrata salad with watercress, basil, sherry vinaigrette and seeded honey; and stuffed garlic bread with whipped mascarpone, sea salt and fennel pollen.

For their main course, diners can indulge in entrees such as nigiri-glazed salmon with sugar snap peas and lime-serrano butter; prime sirloin with porcini rub, whipped potatoes and au poivre sauce; and cavatappi pasta crafted with basil pesto, stracciatella and butter-toasted pine nuts.
Open for dinner Tuesday through Sunday, Deere Park also boasts an expansive patio. A happy hour and bar menu are set to debut later this year. Reservations can be made here.
