During these days of sheltering in place, Chicagoans are getting creative with cocktails—and we're helping out with recipes from some of the city's top mixology stars. Here, a favorite from Mark Phelan, bar manager of Revival Café-Bar at Revival Food Hall.
"The White Lightning cocktail is a drier, more vegetal rendition of a white negroni. The mezcal provides heft and liveliness, the pisco adds florality, and the Suze and Cocchi create a balanced, herbal, bittersweet sensation throughout. It's simple to make and a favorite of our bar." –Mark Phelan
White Lightning
1oz Mezcal (our bar uses Banhez Ensemble)
0.5oz Pisco (our bar uses Barsol Quebranta)
0.75oz Suze
1oz Cocchi Americano Bianco
Stir all ingredients over cubed ice for about 20 seconds. Strain into a chilled coupe glass. Garnish with grapefruit swath, expressed and inserted.
