Craving a bite from San Francisco institution Tartine Manufactory or lauded New Orlean’s eatery Turkey and The Wolf, but don’t have a trip planned? Publican Quality Meats has you covered with the 2019 Swap Meat. The West Loop cafe and butcher shop, helmed by James Beard Award-winning chef, Paul Kahan, is hosting a sandwich-centric pop-up through the month of April where patrons can order up famous—and delicious—offerings from all across the country.

The monthly series kicks off with chef Mason Hereford’s Chicken-Fried Steak sandwich from Turkey and the Wolf, featuring the restaurant's signature bird sauce, pepper jelly and dill pickles. Stop back in February for chef Hosea Rosenberg’s Pork Belly PB & J, straight from Boulder, Colorado’s Blackbelly Market. It will be sure to satisfy all of your sweet and salty cravings. Looking ahead to spring when we’ll all be eager for a bit of green, dig into a “grown up” grilled cheese with asparagus and fava beans from the minds behind Tartine Manufactory.

Any way you slice it, this year’s Swap Meat lineup is the best way to have your tastebuds travel without ever leaving the city.
