With origins dating to the 1890s, the Cherry Circle Room inside the Chicago Athletic Association hotel features dishes that are rustic yet refined. Now Michael Kinasz is putting a new spin on the cuisine as executive chef. Part of the restaurant’s opening team in 2015, Kinasz moved up the chain before taking the helm this year, sharpening the focus on seasonality and produce-forward dishes as he makes the menu his own. “We are really shifting to giving the guests exceptional, quality ingredients,” he says. While classics like the OG Ribeye ($60) will remain on the menu, new plates like the Alaskan halibut ($45) highlight ingredients like white asparagus, almonds and brown butter in beautiful ways. 12 S.
