Housed in the historic McCormick Mansion, Lawry’s The Prime Rib entrenches eager guests in decades of history as it celebrates a laudable 45 years in Chicago. “Lawry’s is a classic, and classic never goes out of style,” says Marketing Manager Shannon Tauschman. Its signature roast prime rib—served in a range of portions including the hefty bone-in Double Cut ($66)—is still toted around on $40,000 gleaming silver carts, but the kitchen has been using the anniversary to experiment with intriguing tweaks like dry-aged cuts. Still, nothing beats a classic, and the Lawry Cut ($49) remains the most popular, with the restaurant selling an average 100 of them daily.
