A Barbie Pop-Up Cafe Brings The Beach To The Windy City

It’s the era of the barbie. The pink-on-pink barbiecore trend is all the rage and buzz about Greta Gerwig’s upcoming “Barbie” movie has reached soaring heights since the second trailer officially dropped. Life in plastic is indeed fantastic, if Ryan Gosling and Margot Robbie have anything to say about it. Meanwhile, entering the barbie-verse in real life is The Malibu Barbie Cafe and it’s everything your childhood self would dream of and more.
While “Barbie” is hitting theaters this summer, the Barbie Cafe is hitting the streets of Chicago in an homage to the beach-inspired Malibu Barbie collection that defined the iconic doll in the ‘70s. Bucket Listers and Mattel have partnered to present this fan-plastic experience, fresh off the success of The Golden Girls Kitchen tour. The cafe will capture the Malibu essentials; think vibrant colors, beach-loving décor and lots of retro glam (this was the decade of disco, after all).

And oh what a Barbie world it is. With menu items playfully pegged “Pacific Paradise Pancakes” and “California Dreamin’ Club Sandwich,” the fast-casual restaurant is pulling out all the stops in honor of the blonde bombshell. You’ll be able to step into a full-size Barbie doll house for picture-perfect photo ops, shop exclusive merch and dip your toes in the sand, all while catchy pop tunes play in the background. The splashy outing isn’t complete without an “Anything Is Possible Sundae,” the final touch to Chef Becky Brown’s (Master Chef finalist) playbook of flavors.
