Logan Square eatery Daisies will host a fermentation-themed pop-up dinner on January 22.

Elements of fermentation have become a hot trend in the food community, appearing on countless menus as the next hip thing. On Jan. 22, Chef Joe Frillman of Logan Square spot Daisies will partner with chefs Sarah Rinkavage of Marisol, Justin Carlisle of Milwaukee’s Ardent and Kevin Farley of Berkley, California’s Cultured Pickle Shop for a one night only dinner centering around preservation and fermentation practices. 7PM, $65 for five courses, $25 for beer and wine pairings, 2523 N. Chef Dawn Wilson of Vicini Pastaria serves up another incarnation of Cena con Amici (“Dinner with Friends”) featuring Perigord black truffles at the menu centerpiece. Big Delicious Planet
Fans of Big Delicious Planet’s Farm Dinner Series won’t want to miss this winter edition hosted at Field Note’s Brand’s rustic Midwest Headquarters located in Fulton Market District on Feb. 8. A leisurely family-style meal in a design-forward setting is the highlight of the evening. Bonus: A seasonal cocktail, local beer and sustainable wines are included in the ticket price. 6PM, tickets $95, 401 N. Racine Ave.

Chef Trevor Teich presents his winter pop up dinner on Jan. 20 with a woods theme. Two seatings (at 5PM and 8:30PM) will offer diners an extravagant 10 course meal featuring menu items like “snails in the woods” and Furikake Bread with butter imported from Normandy. Tickets $185, 327 N. Bell Ave.
